Seasoned Flour Fried Chicken Tacos with Avocado Salsa

Ingredients
FOR THE FRIED CHICKENS:
- 1 packet of KLFC Seasoning Flour (1kg)
- 1 kg of chicken (legs, thighs, or breast pieces)
- 1 cup buttermilk
- 1 egg
- Salt and pepper to taste
- Vegetable oil for frying
FOR THE AVOCADO SALSA:
- 2 ripe avocados, diced
- 1 small red onion, finely chopped
- 1 medium tomato, diced
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- 1 small jalapeño (optional), finely diced
FOR THE TACOS:
- 12 small soft flour tortillas
- Fresh cilantro leaves for garnish
- Lime wedges for serving
Instructions
STEP 1: MARINATE THE CHICKEN
- In a bowl, whisk together the buttermilk, egg, salt, and pepper.
- Submerge the chicken pieces in the buttermilk mixture and let marinate for at least 30 minutes (or overnight for better flavor).
STEP 2: PREPARE THE FRIED CHICKEN
- Heat the vegetable oil in a deep pan or fryer to 350°F (175°C).
- While the oil heats, dredge each piece of marinated chicken in KLFC's seasoned flour, making sure it’s fully coated.
- Fry the chicken in batches for 6-8 minutes per side, or until golden brown and cooked through. Remove from oil and drain on paper towels.
STEP 3: MAKE THE AVOCADO SALSA
- In a mixing bowl, combine the diced avocado, chopped onion, diced tomato, lime juice, cilantro, salt, pepper, and jalapeño (if using).
- Gently toss to combine, making sure not to mash the avocado too much.
STEP 4: ASSEMBLE THE TACOS
- Warm the flour tortillas in a dry skillet or microwave for 10-15 seconds.
- Place a piece of fried chicken in the center of each tortilla.
- Top with a generous spoonful of avocado salsa.
- Garnish with fresh cilantro and serve with lime wedges.
