Spicy Fried Chicken Burger with Sriracha Slaw

Ingredients
FOR THE SPICY FRIED CHICKEN:
- 4 boneless chicken thighs or breasts (pounded to an even thickness)
- 1 cup buttermilk
- 1 egg
- 1 cup of KLFC Seasoning Flour
- 1 tsp cayenne pepper
- 1 tsp paprika
- Salt and pepper to taste
- Vegetable oil for frying
FOR THE SRIRACHA SLAW:
- 2 cups shredded cabbage (red, green, or a mix)
- 1 medium carrot, grated
- 2 tbsp mayonnaise
- 1 tbsp Sriracha (adjust to taste)
- 1 tsp lime juice
- Salt and pepper to taste
FOR THE BURGER:
- 4 brioche burger buns, toasted
- 4 slices of cheese (optional)
- Lettuce leaves
- Sliced pickles
- Additional Sriracha or mayonnaise for spreading
Instructions
STEP 1: MARINATE THE CHICKEN
- In a bowl, whisk together the buttermilk, egg, cayenne pepper, paprika, salt, and pepper.
- Add the chicken, ensuring it’s fully coated, and marinate for at least 30 minutes (or overnight for deeper flavor).
STEP 2: PREPARE THE FRIED CHICKEN
- Heat the vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Dredge the marinated chicken in KLFC Seasoning Flour and ensuring an even coating.
- Fry the chicken in batches for 6-8 minutes per side, or until golden brown and fully cooked. Drain on paper towels.
STEP 3: MAKE THE SRIRACHA SLAW
- In a bowl, combine the shredded cabbage, grated carrot, mayonnaise, Sriracha, lime juice, salt, and pepper.
- Toss well and set aside.
STEP 4: ASSEMBLE THE BURGERS
- Spread Sriracha or mayonnaise on the bottom half of each toasted bun.
- Layer with lettuce, a piece of fried chicken, a generous scoop of Sriracha slaw, and pickles.
- Add a cheese slice if desired, then place the top bun.
