Spicy Fried Chicken Burger with Sriracha Slaw

Ingredients

FOR THE SPICY FRIED CHICKEN:
  • 4 boneless chicken thighs or breasts (pounded to an even thickness)
  • 1 cup buttermilk
  • 1 egg
  • 1 cup of KLFC Seasoning Flour
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • Salt and pepper to taste
  • Vegetable oil for frying

FOR THE SRIRACHA SLAW:
  • 2 cups shredded cabbage (red, green, or a mix)
  • 1 medium carrot, grated
  • 2 tbsp mayonnaise
  • 1 tbsp Sriracha (adjust to taste)
  • 1 tsp lime juice
  • Salt and pepper to taste

FOR THE BURGER:
  • 4 brioche burger buns, toasted
  • 4 slices of cheese (optional)
  • Lettuce leaves
  • Sliced pickles
  • Additional Sriracha or mayonnaise for spreading

Instructions

STEP 1: MARINATE THE CHICKEN
  • In a bowl, whisk together the buttermilk, egg, cayenne pepper, paprika, salt, and pepper.
  • Add the chicken, ensuring it’s fully coated, and marinate for at least 30 minutes (or overnight for deeper flavor).

STEP 2: PREPARE THE FRIED CHICKEN
  • Heat the vegetable oil in a deep skillet or fryer to 350°F (175°C).
  • Dredge the marinated chicken in KLFC Seasoning Flour and ensuring an even coating.
  • Fry the chicken in batches for 6-8 minutes per side, or until golden brown and fully cooked. Drain on paper towels.

STEP 3: MAKE THE SRIRACHA SLAW
  • In a bowl, combine the shredded cabbage, grated carrot, mayonnaise, Sriracha, lime juice, salt, and pepper.
  • Toss well and set aside.

STEP 4: ASSEMBLE THE BURGERS
  • Spread Sriracha or mayonnaise on the bottom half of each toasted bun.
  • Layer with lettuce, a piece of fried chicken, a generous scoop of Sriracha slaw, and pickles.
  • Add a cheese slice if desired, then place the top bun.
