Popcorn Chicken Bowl with Hummus and Vegetables

Ingredients

FOR THE BOWL: 
  • 1 packet KLFC Crispy Popcorn Chicken 
  • 1 cup cooked quinoa or rice
  • 1/2 cup hummus
  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes (halved)
  • 1/2 cup cucumber slices
  • 1/4 cup shredded carrots

For the Dressing:
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

STEP 1: PREPARE THE DRESSING
  • Whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper. Set aside.

STEP 2: ASSEMBLE THE BOWL
  • In a large bowl, arrange cooked quinoa, mixed greens, cherry tomatoes, cucumber, carrots, and KLFC Crispy Popcorn Chicken.
  • Add a dollop of hummus to the side.

STEP 3: Drizzle and Serve
  • Drizzle the dressing over the bowl and toss gently if desired. Serve immediately.
