Popcorn Chicken Bowl with Hummus and Vegetables

Ingredients
FOR THE BOWL:
- 1 packet KLFC Crispy Popcorn Chicken
- 1 cup cooked quinoa or rice
- 1/2 cup hummus
- 1 cup mixed greens
- 1/2 cup cherry tomatoes (halved)
- 1/2 cup cucumber slices
- 1/4 cup shredded carrots
For the Dressing:
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
STEP 1: PREPARE THE DRESSING
- Whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper. Set aside.
STEP 2: ASSEMBLE THE BOWL
- In a large bowl, arrange cooked quinoa, mixed greens, cherry tomatoes, cucumber, carrots, and KLFC Crispy Popcorn Chicken.
- Add a dollop of hummus to the side.
STEP 3: Drizzle and Serve
- Drizzle the dressing over the bowl and toss gently if desired. Serve immediately.
