Popcorn Chicken Po’ Boy with Cajun Remoulade

Ingredients
FOR THE KLFC CRISPY POPCOR CHICKEN:
- 500g KLFC Crispy Popcorn Chicken
- Vegetable oil for frying
FOR THE CAJUN REMOULADE:
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp ketchup
- 1 tsp Cajun seasoning
- 1 tsp hot sauce (optional)
- 1 tsp lemon juice
- 1 small garlic clove, minced
FOR THE SANDWICH:
- 4 small baguettes or hoagie rolls, toasted
- 1 cup shredded lettuce
- 1 large tomato, sliced
- 1/2 cup sliced pickles
Instructions
STEP 1: PREPARE THE POPCORN CHICKEN
- Fry KLFC Crispy Popcorn Chicken as per package instructions until crispy and golden brown. Drain on paper towels.
STEP 2: MAKE THE REMOULADE
- In a bowl, whisk together mayonnaise, Dijon mustard, ketchup, Cajun seasoning, hot sauce, lemon juice, and minced garlic until smooth.
STEP 3: ASSEMBLE THE PO'BOY
- Spread a generous layer of Cajun remoulade on both sides of the toasted baguettes.
- Add a layer of shredded lettuce, sliced tomatoes, and pickles.
- Top with fried popcorn chicken.
- Serve immediately.
