Popcorn Chicken Po’ Boy with Cajun Remoulade

Ingredients

FOR THE KLFC CRISPY POPCOR CHICKEN:
  • 500g KLFC Crispy Popcorn Chicken
  • Vegetable oil for frying

FOR THE CAJUN REMOULADE:
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp ketchup
  • 1 tsp Cajun seasoning
  • 1 tsp hot sauce (optional)
  • 1 tsp lemon juice
  • 1 small garlic clove, minced

FOR THE SANDWICH:
  • 4 small baguettes or hoagie rolls, toasted
  • 1 cup shredded lettuce
  • 1 large tomato, sliced
  • 1/2 cup sliced pickles

Instructions

STEP 1: PREPARE THE POPCORN CHICKEN
  • Fry KLFC Crispy Popcorn Chicken as per package instructions until crispy and golden brown. Drain on paper towels.

STEP 2: MAKE THE REMOULADE
  • In a bowl, whisk together mayonnaise, Dijon mustard, ketchup, Cajun seasoning, hot sauce, lemon juice, and minced garlic until smooth.

STEP 3: ASSEMBLE THE PO'BOY 
  • Spread a generous layer of Cajun remoulade on both sides of the toasted baguettes.
  • Add a layer of shredded lettuce, sliced tomatoes, and pickles.
  • Top with fried popcorn chicken.
  • Serve immediately.
