Southern Fried Chicken with Garlic Butter Mashed Potatoes

Ingredients
FOR THE SOUTHERN FRIED CHICKEN:
- 1 kg chicken pieces (drumsticks, thighs, or breasts)
- 1 cup buttermilk
- 1 egg
- 1 1/2 cups KLFC Fried Chicken Seasoning Flour
- 1 tsp paprika
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- Salt and pepper to taste
- Vegetable oil for frying
For the Garlic Butter Mashed Potatoes:
- 1 kg potatoes (Yukon Gold or Russet), peeled and cubed
- 4 tbsp unsalted butter
- 2 garlic cloves, minced
- 1/2 cup heavy cream (or milk for a lighter option)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
STEP 1: MARINATE THE CHICKEN
- In a large bowl, whisk together buttermilk, egg, paprika, cayenne pepper, garlic powder, salt, and pepper.
- Add the chicken pieces, ensuring they’re fully coated. Cover and marinate in the fridge for at least 1 hour (or overnight for maximum flavor).
STEP 2: COAT AND FRY THE CHICKEN
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Dredge the marinated chicken in KLFC Fried Chicken Seasoning Flour, ensuring an even coating.
- Fry in batches for 8-12 minutes per side (depending on the size of the chicken pieces) or until golden brown and cooked through. Drain on paper towels.
STEP 3: COOK THE POTATOES
- Boil the cubed potatoes in salted water until fork-tender (about 15-20 minutes). Drain well.
STEP 4: PREPARE THE GARLIC BUTTER
- In a small saucepan, melt the butter over low heat. Add the minced garlic and sauté until fragrant (about 1-2 minutes). Remove from heat.
STEP 5: MASH THE POTATOES
- In a large bowl, mash the cooked potatoes. Stir in the garlic butter and heavy cream (or milk). Season with salt and pepper to taste.
